Anyone know if there is any PSD file for the Mobile Joomla available online?

read the documentation. There are paramaters and size for the BANNER.PNG which can be replaced with your image. You can use any graphic editor to create either JPG or PNG file. As long as it has a proper size it would work. Just replace default banner.png file with your in your /template folder

There is no psd file, because of design of mobile templates are based on known products:
mobile_smartphone is based on nokia's template (as far as I remember this one: www.developer.nokia.com/info/sw.nokia.com/id/ba4e3f4d-3c65-4bcf-997b-406ff08207f9/Mobile_Web_Templates_for_Smartphones.html)
mobile_iphone is based on jQTouch framework
and mobile_elegance is based on jQueryMobile framework
